Recipes for Health, Nutrition and Taste!

   Most people believe that when they adopt the Low Carbohydrate lifestyle way of eating it means the endf of good tasting food.  NOT SO!  We have found and enjoyed many recipes.  Some of these below are low carbohydrate, some are gluten free, some are also dairy free.  Enjoy!

In addition to eating food that is gluten free, we now also have to avoid milk and milk products. The good news is that we have discovered Coconut – milk, flour, shredded and whole. We have switched to coconut oil in lieu of butter (it really perks up popcorn). And a company has figured out how to make really great ice cream made from coconut milk. Consider trying some of these recipes if you are working on reducing your BMI (Body Mass Index), have digestion issues (Gluten Free recipes), have Type II Diabetes (low carbohydrate recipes), or just because they are delicious! Coconut supplies mid chain fatty acids (MCFA) that are so helpful in cardiovascular and neurological function. Consider using coconut oil and flour in your recipes. The coconut milk is an excellent alternative to cow’s milk. Shredded coconut is a great addition to many recipes. The mid-chain fatty acids in coconut oil have many health benefits which we will be discussing in the coming months.

 These recipes are Low Carbohydrate and/or Gluten Free. We (Marilyn and John) recommend these healthy food recipes because we make and eat them ourselves!
